Apple Harvest Salad
Crisp, refreshing apples with kale, carrots, cucumber, and chickpeas tossed in a homemade Dijon-lemon dressing.

- 8 cups curly kale
- 3 small carrots peeled and cut into ribbons
- ½ English cucumber chopped
- 1 large Honeycrisp apple 10 ounces
- 1 can chickpeas drained and rinsed
Lemon-Dijon Dressing
- 2 tbsp Dijon mustard
- 2 tbsp lemon juice
- 1 tsp table salt
- 1 tsp sugar
- ¼ tsp black pepper to taste
- ¼ cup extra-virgin olive oil
Make the Dressing
In small bowl, whisk together Dijon mustard, lemon juice, salt, sugar, and pepper until combined.
Then slowly drizzle in the olive oil, whisking slowly until combined.
Pour over the salad and serve. Or if using another green besides kale, pour over the dressing just before serving.
