Stir Fry Zucchini – Quick Dinner

Fresh zucchini with soy sauce, sesame oil and chili garlic sauce. This is my go to zucchini dish and it is so simple and delicious! 

When zucchini season comes around, zucchini are plentiful and if you’re looking for a healthy alternative to zucchini bread, this simple stir fry zucchini is a great option. Birthed out of convenience, I love this dish because it’s so quick and easy to prepare but absolutely delicious.

Why Zucchini?

I love using zucchini because it cooks fast, and it soaks up the flavor of the soy sauce, sesame oil and chili garlic sauce. You could add other quickly cooking veggies such as yellow squash and sugar snap peas.

Can this Stir Fry be a Meal?

Sure! It can make a nice light dinner over a bed of white rice. It’s light and a wonderful vegetarian meal and perfect for summertime dinners.

Can You Cook Other Vegetables Instead of Zucchini?

Certainly! You can use this same recipe and substitute other vegetables just know that the cook time will vary based on the vegetable. If you want to cook with multiple vegetables, start with the vegetables that take the longest to cook and then add the remaining vegetables.

Use a Frying Pan or Wok

For this cooking method, using a frying pan or wok will work just fine to quickly cook the zucchini.

Stir Fry Zucchini

Tender and fresh zucchini quickly cooked with soy sauce, sesame oil and chili garlic sauce makes a delicious side dish or entree over a bed of rice.
Course Side Dish
Servings 4

Ingredients

  • 1 lb zucchini
  • 1 ½ tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tsp chili garlic sauce

Instructions

  • Wash and cut the zucchini into half inch pieces.
  • In a large frying pan or wok add zucchini, soy sauce, sesame oil and chili garlic sauce.
  • Cook over medium-high heat, stirring ocassionally until the zucchini is fork tender but not mushy, about 4 to 5 minutes.
  • Serve immediately as a side dish or over a bed of rice.
